Continuing Bali’s new-found dominance as a culinary destination, Syrco BASÈ has opened amidst the idyllic rice terraces of Ubud.
If you’ve not been to Bali in a while and still have notions of cheap warungs and hotel breakfast buffets being the pinnacle of the island’s gastronomy, oh, are you in for a treat next time you venture top the tropical south. Not only has Bali drawn talent and innovation from the four corners of the world since the pandemic, but it does so with an inherent holistic elegance that makes so many new openings insightful and unique.

The newest arrival is certainly one to get excited about if you value what you put in your mouth. Dedicated to transparency, traceability and a journey that transcends boundaries and cultures, Syrco BASÈ has opened as a new culinary complex in Ubud.
The passion behind this ambitious project is young Dutch chef Syrco Bakker, who has already won acclaim for his unique and pure culinary style, earning several prestigious awards as well as two Michelin stars for Pure C (now closed) restaurant in the Netherlands.

At this exciting new concept, Bakker taps into that creativity and his experience at the likes of Sergio Herman’s three-starred Oud Sluis, both of which led him to become one of the youngest head chefs with two stars in the world – to deliver a gastronomic landscape that reaches from Amsterdam to the volcanic peaks of Bali.
The chef’s table, located in a separate building adjacent to the main dining room and bar, is the experience you should be venturing to Ubud for. Here, the dinner begins in the Chef’s Table’s own elegant lounge, where innovative cocktails are served before up to 14 lucky guests (just 8 on our visit) are ushered into the next room and a perch at an omakase-style counter with great views into the bustling kitchen.
Here, each meticulously crafted dish and pairing contributes to a broader narrative of flavours and seasonal exploration – be sure to opt for the intriguing beverage pairing, which includes signature cocktails, soju, sakes, wines, local beers and more.
Before or after this unique culinary experience, be sure to head up to The Bar at Syrco BASÈ, which takes centre stage on the first floor of the main building and hosts up to twenty guests. Guided by experienced bar manager and mixologist Tommy, the bar offers a captivating selection of intriguing libations and like the dishes in the Chef’s Table, many celebrate relationships with the local community and are laced with ingredients from the restaurant’s own gardens.
