Chef Takashi Saito, one of the world’s most sought-after sushi chefs, has opened his newest outlet in Central Hong Kong.

We’re talking sushi that’s good enough to earn you three Michelin stars. Chef Takashi Saito’s seven-seater Tokyo sushi mecca Sushi Saito is a culinary icon in Japan, where sushi is a serious business, and now he’s opened his first branch in Hong Kong, at the Four Seasons.
Almost two years in the planning, Sushi Saito Hong Kong is located at the top of the luxury hotel, in a space that was once The Peak Suite, one of the city’s most breathtaking function spaces.

It’s a fitting location for a sushi restaurant that’s committed to returning sushi to its Edomae-era origins. Paying respect to timeless tradition and the art of fish aging, rice cooking, and the preparation of fresh fish, which is hand-selected by the chef and flown in daily from Tokyo’s Tsukiji Market, Sushi Saito promises to be one of the most coveted tables in Hong Kong for many years to come.
Ensuring the quality is maintained at the same renowned standards you’ll find in Tokyo, the Hong Kong offshoot will be helmed by the 29-year-old Chef Ikuya Kobayashi, who has been working closely with chef Saito for more than eight years as his second-in-command in the Japanese capital.

Of course, this level of quality also means popularity and the new restaurant already has a waiting list but regular guests of Global Link restaurants and of the Four Seasons will get priority reservations so it might be time to book a room.
