Hong Kong’s newest bartender-driven cocktail haven, The Old Man, takes its inspiration from the tomes of regular bar haunt Earnie Hemingway.
The pre-eminent American novelist of his time, we all know Ernest Hemingway also enjoyed a tipple or two. Inspired by the great writer’s understated style and sophisticated taste, The Old Man, Hong Kong’s newest speakeasy, is the brainchild of three of Hong Kong’s finest cocktail pioneers, Agung Prabowo, James Tamang and Roman Ghale.

A bar for true cocktail aficionados, The Old Man serves up strong, clean, and deceptively simplistic libations within cozy interiors reminiscent of a library or perhaps Papa’s own mancave. With Agung at the helm and James and Roman leading day-to-day operations, the three ‘old men’ have finally brought their dreams of opening a bar together to fruition – and the product is nothing short of genius.
Sequestered in a discreet location off Aberdeen Street in Soho, the unique new bar concept (which was sadly followed by a far less successful venue called The Sea) sweeps fans of both Hemingway and well-made drinks into a world tailored to the beautifully complex mind of the iconic writer. With a name, drinks menu, and overall concept paying tribute to Ernest Hemingway’s Pulitzer Prize-winning fictional work, The Old Man and the Sea, guests get a taste of some truly inventive cocktails, many with an Asian touch.
Highlights of the menu include The Little Wax Puppy, a blend of beeswax-infused Michter’s small-batch bourbon with eucalyptus honey and bitters; the Papa Doble, with pineapple sous-vide rum, pink grapefruit, lime, and maraschino sous-vide jalapeno; and The Sun Also Rises, with coconut oil fat-washed applejack, curry leaf-infused gin, sweet vermouth sous-vide pandan leaves and kaffir lime. They also do a mean Hemmingway Daiquiri.
