Jair Gudino Chavez, of the Jing An Shangri-La’s chophouse 1515 West, heads up Lago‘s kitchen, creating small plates with Serrano’s signature bold flavours that are designed to be shared, perhaps on the restaurant’s large outdoor terrace, under beneath its eye-catching dining cupola.
The menu includes Italian classics recreated with a twist, like the traditional surf and turf pairing of vitello tonnato, with chargrilled-edged veal and a tuna mousse, served with a stripe of squid ink; and tiramisu, which Chavez deconstructs with toasted ladyfingers and cocoa powder crumbled over dollops of mascarpone and espresso ice cream.

The entryway to the restaurant is reminiscent of the Bellagio water fountain, and the terrace, which overlooks the Suzhou Creek, is elegantly draped in marble and glass, so even if you’re far from the slot machines of the desert you’ll still feel a touch of lady luck in the air.
