Renowned Michelin-starred chef Olivier Elzer is set to shake up health-conscious dining in Hong Kong with a new keto menu at his contemporary French restaurant, Clarence.

As a dedicated practitioner of diverse fitness routines ranging from Muay Thai to triathlon training, chef Elzer is well-known for his commitment to making French cuisine lighter and healthier and his recognition of a common struggle among fitness enthusiasts – the need to sacrifice taste while adhering to specific diets for health or weight-loss goals.

To address this, Elzer has introduced a ketogenic menu to his infinitely-elegant French restaurant in Central Hong Kong. Made in collaboration with Oliver Smith, clinical nutritionist, ketogenic diet specialist and co-founder of Ketogenic Asia (who discovered the transformative power of the ketogenic diet through his son’s experience with intractable epilepsy and autism), the new veto menu weighs in at only 1,088 calories.

“Whenever I’m working out, because I’m a chef, other gym goers often complain to me about how they struggle to maintain a balance between taste and health in their diet,” says Elzer. “Our new keto menu is a reflection of my belief that health-conscious dining can also be tasty.”

Prepared with high-quality ingredients that align with the principles of a ketogenic diet, the menu features a tasteful selection of dishes, such as Alaskan king crab legs (above) with tomato pulp and eggplant caviar; Tandoori Chilean sea bass; and Pork pluma (below) with gribiche a cold French egg sauce made by emulsifying hard-boiled egg yolks and mustard with a neutral oil like canola or grapeseed.

Clarence’s keto menu is meticulously designed to ensure it remains consistent with the principles of keto, with the entire selection containing no more than 10g of net carbs while providing an optimal quantity of healthy fats, thoughtfully served as sauces on the side.

Sports enthusiasts will also find satisfaction in the menu, as it offers an ample supply of high-quality proteins to support their nutrition requirements, meaning you can indulge in a culinary experience that matches the calibre of a Michelin-starred chef while still aligning with your health goals – think of the date night potential alone!
