New Hong Kong restaurant Aria promises contemporary Italian cuisine by executive chef Andrea Zamboni so good it will inspire its namesake operatic solo.
It’s not a great time to be opening a restaurant, to be sure, but that doesn’t mean that we should go hungry. In preparation for better days ahead, talented chef Andrea Zamboni taps into his extensive 20-year career to deliver a contemporary rendition of authentic Italian fare at Lan Kawi Fong’s California Tower.

Aria will showcase seasonal ingredients from sought-after producers in Italy and around the world, delivering a modern twist on family-style Italian cuisine that promises to elevate traditional classics and secret family recipes.
A native of Bergamo, in Italy’s north, Zamboni has forged a career in leading kitchens across central and southern Italy – including at the Capri Palace Hotel in Napoli and Ristorante L’Erba del Re in Modena – as well as time spent at Hong Kong’s Otto e Mezzo Bombana, and menus at the new eatery will be a reflection of his experience and inspirations, with some dishes laced with ingredients found nowhere else in the city.

Look out for the likes of Tagliatelle with zarda spicy tomato sauce, blue lobster, and Bagna-cauda fondue; Foie Gras e Scampi; traditional baked eggplant parmigiana with basil, Parmesan cheese, and fior di latte; and Milanese-style milk-fed veal cutlet with tomatoes, celery relish, and Sicilian lemon, and for a true culinary journey, book ahead for the chef’s table, where Zamboni presents a feast of off-menu dishes that change weekly.
