One of Hong Kong’s most esteemed cocktail bars has reached into the history books to create The Archivist, an exciting new cocktail menu of timeless classics.
As bars reopen in Hong Kong, we expect you’ll look for the right libation with which to celebrate your new-found freedom. That inspiration just might be found at the Lobster Bar, which has revealed a stunning new cocktail menu called The Archivist.

Created by acclaimed mixologist and Lobster Bar manager Bob Louison, The Archivist menu takes its cues from his own collection of cocktail history books, offering sippers an opportunity to slip back in time through the centuries to the heyday of the classic cocktail.
Louison, who was named ‘The One To Watch’ in Asia’s 50 Best 2019, takes guests on an adventurous journey through centuries of cocktail renaissance. Inspired by classic cocktails from bygone eras, the Lobster Bar’s team of ‘cocktailians’ has given each of the drinks a modern twist to reinterpret classics from around the world and throughout history.
The six eras covered by the new menu, which includes 12 cocktails and six mocktails dating from the 1600s to the post-prohibition period, include the Age of Punch, a period punctuated by eclectic blends of leftover wines, beers, and spirits pioneered by English sailors and later adopted by sipping society in the US. There, the concept of mixing various ingredients in alcoholic drinks became a cultural obsession, a work of art and a passion, and eventually an industry on its own, giving birth to classics like the Prescription Julep and Little Egypt.

America’s 13-year flirtation with prohibition also gave rise to an era of mixology dominated by homemade moonshine and spirits illegally imported into the country. Classic tipples from the period include the El Presidente, a heady blend of white rum, orange curaçao, dry vermouth, and grenadine.
Complementing the new cocktails, which are priced at HK$110-HK$140++, is a new Bar Snack Menu featuring lobster bar puffs, lobster rolls, country terrine, and the popular Seafood Platter.
