We know that Bali is one of the top destinations that lads across Asia are eyeing as we emerge from the sh*tstorm that is Covid, and for good reason. While Indonesia has struggled with the pandemic, Bali, which was closed to foreigners over a year ago, has fared better and is set to make a triumphant return as soon as borders reopen. When it does, you’ll be looking to make up for lost time with a few iconic Balinese experiences and one of those has to be cocktails perched above the towering cliffs of Uluwatu.

Fortunately, Sunset Cabana Bar, the vertiginous cocktail destination at Alila Villas Uluwatu, has created an intriguing new list of signature libations, many of which incorporate locally sourced ingredients to get that all-important sense of (another) place we’ve been craving.
Imaginatively crafted by the resort’s newly appointed ‘liquid artist’, I Putu Wirawan, the new lineup creates a multisensory drinking experience for punters bound for the island’s southeast.
Highlights of the new menu include Segara, an eye-catching ocean-inspired cocktail that combines Hendrik’s Dry Gin with seaweed cordial, butterfly pea curacao, sherry, truffle oil, and citrus; Omakase, with Sakurao Original Dry Gin, Yamagata Masamune Umeshu, yuzu, Sichuan spice cordial, citrus, and matcha; and Sasih Kesanga, a blend of Arak rice spirit, citrus, passionfruit, charcoal syrup, pomelo, and aromatic bitters inspired by the rituals that take place before Nyepi, the Balinese day of silence.
The bar also does some stellar classics, each given a contemporary nudge. The Westpresso Martini, for example, is a fantastic and heady blend of cold-brewed Arabica Coffee from boutique producers in West Java, Nusantara coffee liqueur, and caramel syrup, garnished with star anise.
You can scroll through the new creations by scanning a QR code once you take your clifftop perch, and then pair with snacks from the extensive food menu, which ranges from great cheese platters through to alcohol-soakers like potato wedges.
