It’s commonly believed that the diet of populations living around the Mediterranean is the healthiest on the planet. In fact, the traditional Mediterranean diet, which consists of fresh fruit and vegetables, plenty of nuts, fish, and of course, olive oil, can reduce stress and prevent illnesses like heart disease and stroke. Now, Wellington Street’s newest culinary destination showcases a modern approach to timeless Med cuisine.

Quiero Más (a phrase we’re sure that Spanish girlfriend of yours used to whisper in your ear) translates as “I want more” and is the name of the newly-formed Silver Oak Group’s first eatery. Located in the Penthouse of the M88 Tower on Wellington Street, this Mod-Med outpost promises the best flavours from Spain and across Southern Europe’s tavernas, trattorias, and tapas bars, presented with respect to tradition but with modern techniques that are bound to thrill foodies.
Quiero Más’ menu offers a curated selection of familiar Mediterranean dishes each given a nudge into modernity by Spanish Chef Alex Fargas, formerly of La Paloma in Sai Ying Pun. The extensive menu elevates ‘Mod-Med’ fare to a new level while staying true to the traditional preparation methods, tastes, techniques, and talents of the regions of Spain, Southern France, Italy, Greece, and even North Africa.

Highlights include Lobster a la Louie, whole Boston lobster in a rich Vichyssoise puree; King Scallop Escabeche, succulent, meaty mollusks delicately marinated in a lemongrass and roasted shallot dressing atop lush Avocado puree; whole grilled Seabass swaddled in a peppery, cream-caper sauce; Cochinillo Asado, slow-roasted suckling pig; and ‘Mod-Mad-Mary’, fork-tender aged-lamb shoulder with a chocolate glaze.
Of course, this is a contemporary take on classic Mediterranean cuisine so expect bold, modern interiors by Hernan Zanghellini of ZHA+MA2 studios that include elements of cobalt blue and turquoise offset with warm oak wood flooring, soft leather banquettes, Moorish lighting touches, faint Art-Deco stylings, and handcrafted Terra-cotta tiles.
There’s a stylish island bar and an adjacent cocktail lounge, ideal for those pre-dinner aperitivos, as well as a main dining room with a private table that boasts the best views in the house, the perfect setting for chef-driven bespoke menus.
