Tap into Italy’s rich culinary heritage at the final concept to launch at the multi-faceted Publico complex at The Quayside, Publico Ristorante.
Singapore is a city that lends itself to authentic dining to perfection and the Lion City’s newest culinary destination has an enviable location right beside the tranquil Singapore River. With interiors that take their cues from modern Italian architecture and a menu packed with bold Italian flavours, Publico Ristorante takes its inspiration from the alfresco piazzas which dot Italy’s coastline.
Dressed in intricate masonry, with bold geometric granite floors, floor-to-ceiling windows, and furniture by New York’s AvroKO firm, Publico Ristorante is the perfect marriage of Italy past and present. It’s welcoming dining room, with its twin pizza ovens, and leafy terrace set the scene for the cuisine of executive chef Marco Turatti.
Look out for signature dishes like Risotto “alla Milanese” with saffron, pecorino cheese, and red wine reduction; and wood-fired pizzas including the Baci e Ricotto, with homemade tomato sauce, mozzarella cheese, smoked scamorza, shavings of pork belly, and crumbled ricotta.
Match your dishes with a curated wine list that whisks you through Italy’s top wine producing regions, from full-bodied Chiantis from Tuscany to crisp white Pinot Grigios from Friuli, and authentic cocktails laced with housemade vermouth and artisan cocktails – classic cocktail lovers should look out for the Negronis on tap.
