Penicillin, a new Hong Kong bar concept by industry legends Agung Prabowo and Roman Ghale, is set to thrill cocktail lovers this month.
If you’ve not yet visited Soho cocktail speakeasy The Old Man, you’re doing yourself a disservice. The pint-sized hideaway earned itself the top spot on Asia’s 50 Best Bars list last year, in part because of the creativity of co-founders Agung Prabowo and Roman Ghale. Now, these two dynamic bartenders have created Penicillin, a new ‘closed-loop’ bar concept that will open on Hollywood Road this October and which will be helmed by their better halves, Laura Prabowo and Katy Ghale.

With designs by Betty Ng of Hong Kong architectural firm Collective, Penicillin takes its name not only from one of the very first antibiotics but also from one of the most endearing classic cocktails and promises a pioneering bar experience that addresses the need for increased sustainability within the industry. With a focus on either locally sourced or up-cycled food and drink ingredients, the new bar’s menu finds innovation in the true flavours of Hong Kong while constantly looking for ways to minimize its carbon footprint.
Taking a scientific approach to its fare, Penicillin will be a place of experimentation, reflection, and trial and error as it strives to be the city’s first “scrap-less” bar. Exciting design features will include The Penicillin Lab, a space designed to showcase the experimental behind-the-scenes cocktail production process, and a Fermentation Chamber, a small, brightly lit room that exposes behind-the-scenes processes of ingredient fermentation.

Following Penicillin, Agung and Roman have already unveiled plans for the launch of their second venture, DEAD & (pronounced as “Dead End”), which brings another modern take on the dive bar concept to Central Wo On Lane this November.
