The Michelin Glory Dining Experience is an exquisite culinary adventure combining the masterful Michelin-starred cuisines of both Chef Lam Yuk Ming’s Spring Moon and Chef Albin Gobil’s Gaddi’s across a scintillating six-course menu that marks both venues retaining their Michelin stars in the 2021 awards.
The Michelin-starred journey commences at Spring Moon, where Chef Lam pairs two decades of experience with contemporary flair and refined service from Restaurant Manager Marco Wu and his team to elevate Cantonese cuisine to delicious new heights.
The meal begins with an alluring Chef’s appetiser trio. Served in bite-size portions, a sublime trinity of Smoked barbecued Hungarian mangalica pork with honey; chilled tomato with plum wine jelly; and roasted goose liver with barbecued pork and eryngii mushroom is paired with chilled Fuding jasmine dragon pearl tea, one of two blends chosen by certified National Tea Artist Elvis Wong.

With palates stimulated, diners will then enjoy garoupa and chicken soup with fish maw and wonton; and pan-fried crab claw with ginger, spring onions, and bean curd sheet, matched with smooth Zheng Shan Xiao Xhong tea.
Guests will then make their way to Gaddi’s, where Chef Gobil delights guests with inspired interpretations of modern classics, and where the crisp, old-world service of Restaurant Manager Michele Drusacchi and his team is complemented by a wine list of over 700 of the world’s finest vintages.
At Gaddi’s, this grand epicurean adventure continues with a seasonal presentation of Patagonian tooth-fish with Hokkaido sea urchin, green asparagus, and lemongrass emulsion, followed by Mieral pigeon with baby turnips, fresh cherries, and Jamaican pepper. In a gloriously refreshing finale, golden apple confection is paired with light vanilla cream and Granny Smith sorbet.

The Michelin Glory Dining Experience at The Peninsula Hong Kong is available from January 27 to April 24, 2021 (Tuesday to Saturday), and is priced at HK$2,388++ per person, with wine pairing available for an additional HK$780.
