The creation of Roux Scholarship-recipient Executive Chef Armand Sablon, the grill-centric menu is laced with French finesse and the flavours of a Spanish josper grill.
New additions include Chef Sablon’s take on seared scallops, served with crispy pork belly, pumpkin purée, and dressed with truffle sauce; poached prawns and sea bass tartare, served with avocado and al dente quinoa; seared Scottish salmon topped with clams and served on a pillow of broccoli purée; and the beautifully baked wild mushroom and asparagus Vol-au-Vent with winter truffle.
