Gab’s Gastro Bar is an eclectic new spot that embraces both Italy’s culinary heritage and Bali’s carefree spirit, drawing diners into a dynamic, artistic space that celebrates the beauty of shared meals. At the helm is chef Gabriel Fratini, and the meal you should be opting for is his intriguing Menu Al Buio or Menu in The Dark.
Born in 1958 in Pianella, Italy, Gabriel Fratini’s artistic journey began at a young age. Despite an obvious talent for art, chef Gabriel followed his fiery passion for cooking and would go on to cater to the palates of global icons like Michael Jackson and Roger Federer.

While cooking took him around the world, Gabriel never abandoned his love for art. Wherever he worked—be it Switzerland, Hong Kong, or Singapore—he always carried his easel and canvas. A stroll through his paintings, many of which are displayed in his new Bali restaurant (you’ll also find them in the rooms of the Sheraton Towers Singapore and the National Museum of Art in Tokyo), takes you on a visual journey, from the velvety texture of Venetian canal scenes to the electric energy of Indian marketplaces and the whisper-soft elegance of Japanese cherry blossoms.
At GAB’s GastroBar, chef Gabriel’s vision materialises through a dedication to crafting fresh, personalised dishes daily. Central to GAB’s philosophy is the idea of fostering camaraderie through food and the unique Menu Al Buio – think of it as an Italian omakase – takes guests on an intimate journey through chef Gabriel’s culinary heritage. You sit, and he presents a multi-course feast, laced with the freshest seasonal ingredients sourced that day. Your dishes can even be paired with an extensive selection of Italian wines.
