Hong Kong modern Japanese hotspot Honjo delivers an elemental odyssey with its new Dreamer Tasting Menu.
Grounded in the Sheung Wan restaurant’s culinary philosophy of precision and innovation, Honjo’s new tasting menu pushes the boundaries of technique and ingredient combination, offering intrepid gourmands that chance to immerse themselves in progressive Japanese dining without having to leave Hong Kong Island.

Promising bold and adventurous flavours, the restaurant’s culinary team has drawn inspiration from Japan’s bountiful land and sea as well as their own experiences, to create a menu that’s thought-provoking as well as satisfying.

Diners will begin with edamame, a traditional starting point, and chicken wings seasoned with Okinawan black sugar, chives and fresh chili. This is followed by hamachi with jewel-like ikura and watermelon radish pastels; and a Kani salad of king and snow crab from Hokkaido, accented with kohlrabi confit, ikura, finger lime, and zesty tomato jelly.

Rustic East-Meets-West beef tartare with purple wild rice chips; and tempura zucchini flowers stuffed with minced prawn and beef take things up a notch, before the chefs present a selection of sushi and sashimi based on the freshest daily catch.
Just when you thought you’d be stopping off for a kebab on the way home, the Dreamer Tasting Menu (HK$680pp) delivers an Australian BMS 3 striploin, served with fermented mushroom puree, yamaimo mountain yams from Japan, and truffle yuzu ponzu.

After a refreshing lemongrass granita with basil cream and apple crumble, you’ll finish your culinary journey of Japan with Hokkaido milk chip ice cream and mikan-infused with genmaicha set atop white chocolate. Perfection.

However, you’d be wise to book ahead for the new tasting menu, as you may be a dreamer, but you’re certainly not the only one.
