Fans of dynamic designer Ashley Sutton can delve into an imaginative space inspired by the florists of Paris at Dear Lilly, Dining Concepts’ newest Hong Kong concept.
Even if you don’t know Australian designer Ashley Sutton you’re bound to know his work, which ranges from iconic Hong Kong watering holes J.Boroski, Ophelia, and Iron Fairies through to Bangkok’s Iron Balls Bar and Dreadnought. Well, the eclectic creator is at it again, outfitting Dining Concepts’ newest venue, Dear Lilly, at Hong Kong’s IFC Mall.

Inspired by the hole-in-the-wall florists found along Paris’ most beautiful boulevards, Dear Lilly is a tribute to love and romance; a floral wonderland dressed with bouquets of blooms, WWI and WWII-era love letters (from which the name was derived), black and white portraits, engraved marble and shelves of vintage perfume bottles sourced by Sutton from around the world, the new restaurant and bar is designed to be whimsical, fantastic and moving all at once.
The cocktail menu follows form, with heady Parisian classics from the 1920s laced with the likes of Lillet Rouge, Domaine Canton and Pere Magloire VSOP calvados complementing new signature creations, including the Green Fairy, with Matusalem Platino rum, green Chartreuse, yuzu juice, pineapple juice, and coconut water; and the Mademoiselle Lilly, a blend of vodka, Kwai Feh liqueur, Lillet Blanc, cranberry, lime juice, raspberry puree and homemade hibiscus syrup.

Match your drinks with contemporary Med-leaning European cuisine from the set and a la carte menus, which include slow-cooked octopus with roasted pepper salsa; Puttanesca Pappardelle with olives, capers, anchovies and Parmesan;Â New Zealand lamb; and poached sea bass with herb crushed new potatoes and salsa verde.
