If the week’s built up an appetite, Castellana Hong Kong, opened in collaboration with Michelin-starred chef Marco Sacco, presents a new vegetarian menu while revamping its signature Journey Around the World menu for lunch and dinner.
The new Castellana vegetarian menu celebrates the season’s finest produce from Piedmont and Japan (in the interest of sustainability), with many dishes showcasing the traditional Piedmontese slow-cooking technique, which allows rich flavours to develop.

Highlights include Piedmont porcini mushrooms, grilled with olive oil and seasoned with salt, white pepper, fermented black garlic, and garnished with Piedmont hazelnut crumble; Avellino Montoro Onion Soup with Montoro onion slow cooked in salt for four hours and served with burnt onion dust and homemade vegetable stock infused with kombu; Fregola con Porcini, artisanal fregola pasta with Porcini mushrooms; and slow-cooked Eggplant Parmigiana with Liguria basil leaves, Val di Chiana garlic, Italian tomato sauce, and burratina cheeses from Apulia.
In fact, cheese lovers can end this vegetarian feast with a selection of classic Piedmont cheeses that rotate daily depending on availability. These include Robbiola di Roccaverano, Murazzano, and Gorgonzola Dolce & Stagionata. If you’re in no hurry to get back to the office, opt for the specially curated wine pairing, which highlights Piedmont’s famously diverse selection of elegant white wines and bold reds.
