The new limited-edition 30 Year Old single malt from Bushmills is going to challenge what we thought you knew about Irish whiskey.
Irish whiskey has come a long way in the last few years. Once the smooth but diminutive cousin of Scotch, Irish whiskey has enjoyed a renaissance fueled by new distilleries and new consumers looking for alternatives to the big drams from across the Irish Sea. However, many consumers still don’t see truly aged Irish whiskey as being on par with the greatest single-malts; it’s great neat or with a soda topper but it’s not something to get excited about. Perhaps, until now.

Bushmills, one of Ireland’s leading whiskey producers, has released its exquisite limited-edition (isn’t almost everything these days?) 30 Year Old New American Oak Cask single malt. Limited to just 432 bottles, the release is the oldest age reference in the brand’s Causeway Collection, a series of rare cask finished single malts by master blender Helen Mulholland (below) that includes spirits finished in cognac, fortified wine, and wine barrels.
In the case of the new 30 Year Old, the whiskey has spent its formative years – 14 to be precise – in Oloroso sherry and bourbon casks, before spending a further 16 years in new American oak, ensuring a bold, rich and creamy flavour profile that whiskey lovers of all denominations will appreciate. The spirit was then non-chill filtered, and bottled at a soul-soothing cask strength.
